Roasted Fennel and Spring Vegetable Salad

Someday I'm going to write a book called 101 Ways to Make Tacos because tacos are what we have for dinner. Seriously. Every. Single. Night.

Okay, maybe not every single night, but certainly most weeknights. At this point, my partner has basically stopped asking what's for dinner because it's obvious: beans and something else that's going to go inside of corn tortillas. Any questions?

Someday I'm also going to write a book called 101 Ways to Make A Salad because salads are what I have for lunch practically every single weekday.

The key to making a good salad is this: it has to have a good protein source (I usually opt for beans or lentils), a variety of vegetables with complimentary flavors and textures, and a good dressing. For most salads, I usually dress the leaves in a little plain balsamic vinegar, but the classic balsamic vinegar and olive oil mix is fabulous for almost any salad.

And if you eat an oil-free diet, subbing avocado in for oil is a fabulous way to still enjoy a creamy dressing. This sweet and tangy mango salad dressing and this jalapeno avocado lime dressing are great oil-free options.

My personal challenge to enjoying salads is that I don't typically crave raw veggies because Seattle is cold most of the year. However, I can get around this by roasting vegetables and adding them (while still warm) to a bed of cold greens. This salad is my newest favorite and it's a fabulous meal during these cold, drizzly days of spring.

Roasted Baby Turnips with Spicy Mustard Dressing

No one should ever have to weedwack their entire lawn. Ever.

Unless, perhaps, you have teenagers and want to punish them... Unfortunately, I don't, so I got to experience the punishment for myself.

Earlier this year, my partner and I began renting a house from family members who are currently living overseas. I was excited at the thought of renting an entire house, however, it never occurred to me that with the amazing deal they were giving us, it also meant we had to do a lot of work.

It didn't even cross my mind that I would need to mow the lawn. That is, until I noticed that our grass was about a foot and half taller than the yards on both sides of us. Oops.

The grass was so tall, in fact, that the lawnmower repeatedly stalled when I tried to mow it. And that is when I came up with the brillant idea to weedwack the entire lawn and then mow it.  Two and a half hours of the most intense work ever, I felt like the biggest idoit on the planet. Well, at least I did until I woke up the next morning and saw how amazing my arms looked.

So, in summary, don't ever let your lawn get long enough that you need to weedwack it, but if you do, just know that you'll look great afterwards.

And, if any of you have suggestions about a smarter way I could have handled the lawn situation, I'll take 'em. Maybe I can even trade you a recipe for some landscaping advice... Roasted baby turnips, anyone?

My Philosophy on Food, Health, and Life

What does it mean to you to be healthy? What does being healthy look like and feel like for you?

One of the things that I love most about this blog and our blog community is that although we talk a lot about food, this blog is really a place to talk about what it means to live our healthiest, happiest, and fullest life. As a certified holistic health coach, one of the greatest lessons that I could possibly share with anyone is that your health is not just about your physical body -- it's about emotional, mental, and spiritual health too. So, I thought we'd spend some time today talking more about what it really means to be healthy and my philosophies around food, health, and life in general.

When it comes down to it, I really have three simple guidelines that I follow:

#1 Moderation and The 80/20 Rule

For a big part of my life, I categorized foods in two ways: either a food was "good" or it was "bad." I don’t know about you, but as soon as I am told that I can’t or shouldn’t have something, that’s exactly what I want. As a result, I spent many, many years trying to guilt myself into avoiding the forbidden "bad" foods, only to wind up with failed willpower and eating way too much junk overall. Several years ago as I began to clean up my diet and eat more fresh, whole foods, I found a better balance by using The 80/20 Rule.

The 80/20 Rule is essentially this: 80% of the time I focus on eating fresh, healthful foods that make my body feel strong and vibrant and 20% of the time I allow myself to have treats (or less-than-optimal foods)

Over time, I've found that eating with balance actually helps me to eat better overall because I get to enjoy healthy foods that I love while not feeling deprived of treats from time-to-time. And as I have applied this rule to other areas of my life, I have found myself enjoying my workouts more, focusing on quality time (instead of the quantity of time) spent with those I love, and feeling more balance in all areas of my life.

#2 Listen to my body and trust what it tells me

Listening to my body is a huge one for me. I have personally experienced a variety of health issues throughout my life and the way I have managed to get through each one is by listening to my body and trusting the messages it sends me. When I say that I listen to my body, I simply mean that I notice how I feel after I eat certain foods. I believe in the concept of bio-individuality and that everyone's body is a little different. This means that foods and exercises that makes me feel great might not work for someone else, and vice versa.

There are hundreds of different diets and ways of eating, and I do not believe that there is one perfect way of eating that works for everyone. One of my biggest pet peeves with the nutrition world is that there are so many different "experts" out there preaching that their way is the best -- and, most of these diets are at complete odds with one another. I don't know about you, but if I tried to follow every new nutritional fad out there, well, it wouldn't be possible and I would drive myself crazy. The world of nutrition and health is constantly changing and evolving and I have found that trusting my own body makes the most sense for me.

I have also found that what my body needs and wants changes over time. As my workout routine shifts, my career shifts, or my social relationships shift, all of these things have an effect on my body. As we grow and change, I believe that we constantly need to be re-evaluating what we are eating, how we are eating, and how we are living in general.

How to Cook Plant-Based Meals for Meat Eaters (and a taco recipe)

I have received a few emails from readers asking for my best tips on making vegetarian and plant-based (or vegan) meals for meat-eaters. After posing the question to our Facebook community, it definitely sounds like this is an area many of you are interested in learning more about. And, since I’m in a “mixed eating” relationship myself, I’m always curious about how other couples manage different eating preferences. So, here goes!

First, let’s start with a little background on this: I’ve been with my partner, Ashley for seven years. Ashley was/is a meat eater and when we first met, was a huge skeptic of anything known as a vegetable. When we began dating, I was also a meat eater, but was working my way towards a healthier diet without processed foods.

A year into the relationship, I began cutting meat and animal products out of my life as well as processed foods and refined sugars. I started eating a greater variety of vegetables, more whole grains, and a variety of legumes. shley was completely supportive of my decision to change my diet and we soon began to find new places to eat out together that could accommodate both of our eating styles. We both discovered that we preferred veggie burgers to the real thing and that there were a variety of plant-based meals that were able to satisfy us both. Even though Ashley was supportive of my dietary changes, she clearly told me that she had no intentions of changing her diet. I strongly believe that the food we chose to eat is a personal choice so although I wished Ashley ate a little healthier, I tried my hardest to respect her food choices.

Don't Fear The Fat

One of the things that interests me the most about nutrition is how people tend to categorize foods as either "good" or "bad." For many years, fat has been seen as the food enemy and is often labeled as "bad," even though it is an essential part of our diet! As a health coach, I often get questions about what the perfect diet looks like or the best ways to lose weight. So, today I thought I would talk a little bit more about fat and why we should be eating it instead of avoiding it.

Healthy fats steady our metabolism, keep hormone levels even, nourish our skin, hair, and nails, as well as provide lubrication to keep the body functioning fluidly.  Healthy fats are especially important during cold months to help insulate our bodies from the cold as well as provide energy.

Many people think that they key to losing weight is to eat a low-fat diet. Although it is important to include the right kinds of fat in our diet, often times a low-fat diet can make us gain weight.

Have you ever bought something at the grocery store that was labeled low-fat? If you check out the nutrition label, you'll usually see that it is loaded with sugar! Fat adds flavor to foods so when companies remove the fat from products (e.g. low-fat granola, fat-free cookies, etc), they add in extra sugar to make it taste better. Excess sugar is one of the keys to gaining weight so what we really need to be watching is the sugar content in our diets, especially if we eat the Standard American Diet with lots of packaged food.

And, eating good fats is one of the keys to healthy weight loss because healthy fats help us feel satiated after a meal, which actually prevents over-eating.

Vanilla Rooibus Tea with Cacao & Mint

Since I'm hosting the savory tea giveaway from Numi this week, I thought it would be fun to talk a little bit more about tea.

If you ever come to Seattle, one of the places that you absolutely have to visit is Remedy Teas on Capitol Hill. I am obsessed with this tea house. They carry over 150 organic loose leaf teas in the cafe, including white, green, oolong, black, rooibus, yerba, and a variety of herbal teas. If you are a tea drinker, this place is pure heaven.

One of my favorite combinations was a seasonal holiday tea they featured several years ago that tasted like chocolate peppermint candy. Let me tell you, I bought out the store. Literally. And over the next eleven months I drank it all.

Then the following Christmas I anxiously awaited for this seasonal tea to return, but they never brought it back. Several months ago I found myself craving this tea again and I finally decided it was time to just make my own combination. So I did.

Top 7 Healthy Traveling Tips

Last week I traveled to Washington DC for work and I thought it would be fun to share some of my best tips for traveling healthfully. Eating healthy and feeling energized while traveling can be particularly challenging, especially if you have special dietary needs or preferences. Since I was traveling for business, I wasn't able to have as much flexibility and control over my schedule as if I were traveling on vacation, so I definitely picked up some techniques along the way that made it easier to eat healthy and feel my best on-the-go.

Tip #1: Do your research before you go
The internet is your friend and it will help you to explore the city you are visiting before you embark on your trip. I always find this especially important if you eat a plant-based diet like I do because it helps you to know how veg-friendly the city is and you can prepare by packing extra snacks if needed. I always look for:
  • The closest natural foods or health foods store. (In a pinch, a regular grocery store will also do!)
  • A nearby juice bar (if possible)
  • Nearby Asian, Thai, Indian, and (healthy) Mexican restaurants. (These restaurants are usually my best bet for finding plant-based protein sources and fresh veggies in an unfamiliar city. Plus, they are also a great option if you are traveling with others that eat meat as they will have options available too.)
If you know that you are traveling to a city that isn't veg-friendly or doesn't have any options for dining healthfully, the next few steps are really important because they will help you to be prepared and make the best choices on the trip.

9 Green Drinks for St. Patrick's Day!

I know that St. Patrick's Day isn't typically associated with green smoothies and juices, but I think maybe it's time we changed the tradition. If you are one of those people heading out to a weekend celebration with corned beef, Irish bread, cabbage, potatoes, or beer, I hope that you'll down one of these green drinks before embarking on the festivities. I promise your body will thank you later!

1. Mojito Juice
A juice packed with fresh enzymes that resembles a fancy cocktail? I'm in! This combination of cucumber, celery, mint, kale, and lemon will leave your tastebuds begging for more!

2. Green Smoothie 101
Green smoothie newbie? Perfect, you've come to the right place! This video tutorial will get you blending up smoothies correctly so your drink ends up healthy and enjoyable!

3. Green Lemonade
This fresh juice combo resembles my favorite childhood drink and is loaded with nutrients! The lemons help cut the "green" taste so this drink is perfect for those new to juicing.

4. Energizing Green Smoothie
If you are trying to replace your morning cup of joe with something healthier or just need a quick, filling breakfast on-the-go, this smoothie is your new best friend. It's perfect for boosting energy, detoxing, and helping you recover from a workout.

5. Bok Choy Green Juice
This juice is simple and refreshing. I love that it only contains two ingredients and makes me feel amazing anytime I drink it.

6. Kale Smoothie For Kids
No green smoothie round-up would be complete without this one! This smoothie is perfect for transforming "picky-eaters" -- adults included.

7. Kale Smoothie For Ladies
This green smoothie naturally boosts energy (without caffeine!), balances hormones, alleviates cramps, helps stabilize blood sugar, and tastes like chocolate. Enough said.

8. Kale Smoothie With Pear and Herbs
This smoothie is one of my favorites in fall when fresh pears are first available at the market, but I love its refreshing quality in spring. The herbs add a beautiful zest that makes me feel like winter is finally over!

9. Mean Green Juice
Don't be intimidated by its name - this juice is incredibly friendly! This post also has a great video to help you get started with the basics of juicing. Drink up!

I hope you enjoyed this green drink round-up! Have a healthy weekend!

Cheers,
Sonnet

Psst, if you enjoyed this, be sure to share it with your friends!

Black-Eyed Pea & Collard Greens Soup

This month For The Love of Food had its third-year anniversary. Three years ago I sat in my dark kitchen photographing roasted vegetables under a stove light (with a point-and-shoot!) for a grad school project. Thankfully things have changed a lot over the years.

I just wanted to take a moment to tell you how grateful I am to this incredible blog community created by each and every one of YOU. Thank you for your encouragement, your wisdom, and for learning together these past three years.

Thank you for putting up with way too many cat stories. Thank you for laughing at my jokes and listening to my constant ramblings about how delicious vegetables are. Seriously... 'cause everyone else in my life is sick of it by now.

And for my gratitude, I give you a simple black-eyed pea and collard greens soup.

Kale Smoothie for Ladies

I'm not going to lie... sometimes it's hard to be a lady. Sometimes there are days when mood swings get the best of you and you become an emotional mess. An emotional mess for absolutely no reason except that, well, you're a lady.

On days like this it's best to stay away from your kitchen. On days like this don't attempt to create a new veggie burger recipe; chances are very high that the recipe that worked so well in your mind won't work out in reality. And then it's just awkward when your male roommate walks in on you crying on the kitchen floor. Not that this has happened to me or anything...

If you do decide to venture into your kitchen, I advise you keep it simple. Throw some frozen bananas into a blender and blend it up with some kale. Toss in some maca powder to correct those hormonal imbalances and add some raw cacao powder for good measure -- unless, you don't like chocolate? And then be sure to enjoy this soothing, fiber-filled smoothie curled up in a snuggie while watching your favorite romantic comedy.

Spicy Kimchi Soup

I like to make myself promises when I move. Promises like: Hey Sonnet, if you take this box of beads with you, you'd better make some earrings soon. Or, if you pack this book, you better promise to read it. Truth be told, that book is still unread and that box of beads is still taped shut from my last move, but I'm taking it with me anyways.

But, I made myself a big promise when I moved a few months ago. I had a giant jar of homemade kimchi in my fridge and I told myself that I would eat it all before my next move - or else! Since my next move came up a little sooner than expected and I hadn't quite worked through that jar of kimchi yet I found myself in a panic this week. What could I possibly do with three pounds of kimchi?

The solution... make soup of course! Making this soup was an experiment and I knew it could go one of two ways: it would either be a great success or a total failure. Lucky for both of us it turned out to be a success and is now one of my favorite soups of all time.

Roasted Vegetables with Lentils

If we were sitting down for lunch together I’d tell you about how I’m a little stressed out this week. I’d confess that by 9 am I already had two cups of green tea when I probably should have had chamomile. At least I started my day with a green juice, right?

If we were sitting down for lunch together I’d tell you about how I’m in the middle of moving… again.  Even though we just moved a few months ago, we got this great opportunity to take over my partner’s brother’s house because he and his wife are moving out of the country. So, in the last two and a half weeks, we broke the news to our landlord and found someone to take over our apartment lease.  The only catch is that the person taking over our lease needed to move in right away so that means we are moving this week. Moving into a house where myself, my partner, her brother, and his wife will be living together for the next month and a half until they move out of the country. Let’s hope they like green smoothies and cats.

If we were sitting down for lunch together I’d take a deep breath, tell you how good it is to see you, and then serve you some roasted vegetables with lentils. After all, it's always good to see you. And I'm really excited for lunch.

Love Your Liver Juice & SPUD Juicing Program

I'm really excited to share something fun with you today.  I was recently contacted by SPUD (Sustainable Produce Urban Delivery) and asked if I would be willing to try out their new juicing produce boxes and share them with you. An excuse to juice more fresh, local produce? Of course I was up for the challenge!

I've seen SPUD's delivery trucks around Seattle, but didn't know too much about their company until recently. The more I learn about them, the more I love their mission. SPUD was founded in 1997 as a sustainable way to directly connect local farmers with customers. 100% of their produce is either certified organic or locally and sustainable produced and over 50% of their products are sourced locally.

One of the things I love most about SPUD is that it's incredibly convenient to order produce online and since the deliveries are consolidated into specific routes, one of their vans leaves with their warehouse with over 100 orders, reducing both pollution and traffic. Pretty cool, huh? SPUD currently serves 6 urban areas in North America: Seattle and the Eastern Puget Sound, the San Francisco Bay area, Los Angeles and Orange County, Vancouver, Victoria and Vancouver Island to Nanaimo, and Calgary (see their full delivery map here).

SPUD recently started a new Juicing at Home program and now offers Organic Juicing Boxes for people who are looking to boost their health by juicing and want a convenient way to save time and money. They have five different produce boxes to choose from and, if you need a juicer, you can even purchase one through their weekly payment program and start using it right away. (I love this idea!)

Juicing 101 [Video]

If you are looking to change your health, juicing is one of the best things you can do for yourself. I will readily admit that I am a juicing addict and I'm super excited to get you juicing as well! In today's video I'll show you how to make a basic juice at home, but first, let's talk about some important benefits:
  • Drinking fresh vegetable juice allows you to consume more fresh fruits and vegetables, which we all know are full of good things like vitamins, minerals, and (since you are consuming them raw) beneficial enzymes. Fresh juice is also loaded with antioxidants that bind to toxins and help remove them from the body.
  • Fresh vegetable juice is very alkalizing, meaning that it helps to restore the body to its proper pH and  assist the body in detoxing.
    • Most of the foods in the Standard American Diet cause the body to be too acidic (e.g. animal products, sugar, fried foods, bread, alcohol, etc) and this acidity builds up over time causing inflammation and creating stress for our organs and tissues.
    • On the other hand, eating fresh, alkaline-forming foods like vegetables, vegetable juice, nuts, seeds, most legumes, water and some fruits, helps to strengthen the body and keep it healthy.
  • Since the juicer extracts the insoluable fiber from the fruits and veggies, fresh juice is very easy on the digestive track (making it perfect for anyone with digestive issues) and it makes the nutrients easy to absorb. Plus, since your digestive system doesn't have to expend as much energy to break down juice, your body can spend that energy on healing your cells.
Drinking fresh vegetable juice is one of the best ways to increase your energy and detox your system!
I know from personal experience that I feel more energized when I drink fresh juice on a regular basis. It's basically like a supercharged liquid vitamin for your cells! I have also found that drinking fresh vegetable juice helps to curb sugar cravings!

Green Smoothie 101 [Video]

I'm a big fan of drinking green smoothies and if there is one thing I could get you to start doing today to change your health, it would be loading up on these healthy green drinks. Today I'm doing something a bit different and sharing a video with you to help inspire you to jump start your health with a green smoothie!

Green smoothies have a ton of benefits, such as:
  • Green smoothies are perfect for enhancing the immune system, purifying the blood, and rejuvenating the body. They are loaded with vitamins, minerals, fiber, folic acid, chlorophyll, and many other micronutrients. Since you are consuming the greens raw, you are also getting the full nutritional value of the greens as well as their digestive enzymes.
  • Green smoothies are really easy to digest.  Since the greens are blended up, your body doesn’t have to work as hard in order to extract the nutrients and it is much easier on your digestive system. So, if you are someone that has digestive issues, this is a perfect way to add more fruits and veggies into your diet.
  • Green smoothies are fabulous for kids! If you have children or teenagers, I highly encourage you to make a green smoothie with them.  The key is to get them involved and let them help make the smoothie so they feel like they are part of the process (rather than being pressured into drinking something unfamiliar). I have honestly make this smoothie with well over 300 children over the last two years and it always amazes parents what kids will drink when they get to be involved in the process.
  • Green smoothies reduce your cravings! When I work with clients in my health coaching practice one of the first things I will get them to do is start drinking green smoothies.  Most of them will immediately notice a decrease in sugar cravings because they are crowding out those less-healthy foods and their body will naturally start to crave fresh foods.
If you are ready to have more energy and change your health, start with a green smoothie.

Cranberry Rosemary Refresher

I have been told by numerous people that the life of a food blogger seems really glamorous. I think sometimes when we see a picture of a beautiful dish, we imagine the chef/photographer standing in their kitchen, leisurely making a delicious meal about to be served to their family, while casually stopping to snap a photograph or two. As a food blogger, I can tell you that this is rarely how it happens. At least, not in my house.

Instead, here's the scene: a rainy Saturday morning.  At home, alone, with two crazy cats. The best light in my house is in my living room, with giant windows that face a main road. There I am, still in my pajamas, standing on a stool above a table to get the best angle as people walk by and shoot me puzzled looks.

Randomly a rogue cranberry falls from the table, inspiring one of my cats to bat it around the living room with all his might. As I'm trying to balance on a stool, ignore the passerbys, and get a decent shot, I knock over the martini glass and spill cranberry juice across my living room.  By now both of my cats are engaged in a cranberry-chasing battle and all of this running has managed to make one of them lose his lunch. Clean-up on aisle five, please?

Nevertheless, I managed to get a decent photograph of an amazing drink that you need to try this holiday season. Whether you leisurely enjoy this at a beautiful dinner with your loved ones, or simply use it as a reward for cat clean-up duty, I promise that it will energize your taste buds while flooding your body with nutrients.

Spiced Orange Cranberry Sauce

I understand that Thanksgiving is over. I know that it's time to move on from lentil loaves, mashed potatoes, and roasted yams. My brain is on board with this. But, my tastebuds? That's a different story.

I made this spiced orange cranberry sauce this year for Thanksgiving and have been indulging myself every day since. I've had this sauce over lentils, spread this on toast, and eaten it after dinner for dessert. If this keeps up, by New Years you might have to send me to cranberry rehab.

In my defense, it's important for you to know that this isn't any ordinary cranberry sauce. This one isn't overly sweet or loaded with refined white sugars like the typical canned cranberry sauce of my youth. Instead, it is sweetened with a few dates and spiced up with ginger, fresh oranges, and zest.
