5 Easy Vegetarian Meals (for Cinco de Mayo)
With Conscious Money, Conscious Eating happening in just a few days, I wanted to write another blog post focusing on the idea of quick, healthy meals that come together in a snap! And, with Cinco de Mayo this weekend, it seemed very fitting to focus on a Mexican theme.
Vegetarian tacos are one of the easiest and most delicious options that we frequently enjoy in our house so today I'm sharing my three favorite veggie tacos recipes, along with two other hearty meals and a side dish. Enjoy!
Looking for something simple and unique to serve this weekend? These Spicy Zucchini and Tomato Tacos might just be the ticket! They also go fabulous with any vegetarian (or non-vegetarian) protein source of your choice.
Tempeh tends to be a staple in our household and these Tempeh Tacos are easy-to-prepare, hearty, and delicious. These are fabulous topped with some fresh tomato and avocado slices for an easy weekend lunch or healthy weekday dinner!
Looking for something vegetarian that even the meat-eaters will love? Enter Pinto Bean and Field Roast Tacos. Field Roast is a local Seattle faux-meat product made with wheat gluten. This recipe combines the hearty texture of Field Roast with fiber-packed pinto beans for a filling meal.
Not a taco person? Not a problem!
This Southwest Salad with Jalapeño Avocado Lime Dressing makes a beautiful meal that's easy to assemble. The dressing is made of six simple ingredients and comes together in a flash. The dressing is avocado-based so it's creamy, packed with healthy fats, and free of oil!

Ahh the fajita baked yams sound amazing! I was going to make fresh corn tortillas with a bunch of grilled vegetables for dinner tonight, but I think the fajita baked yams might have just beat them out!
